👩🍳 Étapes de Préparation
1️⃣ Préparer les cynorhodons
- Lavez soigneusement les fruits.
- Écrasez-les légèrement pour libérer leur jus (mixeur ou cuillère en bois).
- (Optionnel) Enlevez les pépins pour une boisson plus limpide.
2️⃣ Créer le moût
- Placez les cynorhodons écrasés dans un grand récipient non métallique.
- Ajoutez le sucre, puis la levure préalablement dissoute dans un peu d’eau tiède.
- Incorporez l’eau de source en remuant bien.
- Couvrez avec un linge propre.
- Laissez fermenter dans un endroit chaud et sombre pendant 10 à 14 jours.
3️⃣ Fermentation active
- Remuez doucement une fois par jour.
- Des bulles apparaîtront : c’est normal ! Cela signifie que la fermentation fonctionne.
- Filtrez après 2 semaines à l’aide d’un linge ou d’une passoire fine.
4️⃣ Vieillissement du vin
- Versez dans une dame-jeanne avec barboteur (ou tuyau dans un bocal d’eau).
- Laissez reposer 6 à 8 semaines dans un endroit frais, à l’abri de la lumière.
5️⃣ Mise en bouteille
- Filtrez à nouveau pour clarifier.
- Mettez en bouteilles stérilisées.
- Stockez à 10–15°C.
- ⏳ Plus il vieillit, meilleur il sera !
